Introduction to patisserie for beginners This course will be led by professional patisserie chef Joanna Owens from The Organic Cakery at Bore Place. Learn skills and techniques for creating delicious desserts to recreate for friends and family. Working individually and as a group, you will get hands-on experience making a variety of different pudding recipes. You will make Orange blossom creme patisserie glazed fruit tartlets. Chocolate profiteroles filled with blackberry fruit mousseline and white chocolate ganache, with a dark chocolate sauce and blackberry coulis.
Lemon and elderflower scented macaroons with a lemon curd, white chocolate and elderflower filling.
Where possible, all products used will be organic, fairtrade and locally sourced. You will take home all of your produce from the day, along with a box of macaroons, and your recipes and task sheets. The course includes refreshments and a light lunch of soup and salads, and fresh bread. You'll also have a short tour of the organic Market Garden to see where the Bore Place produce is grown.
